Food prep saves the day

Having a busy day? Need a quick meal? Do your food prep! It will save you from eating bad things. Having the healthy food on hand and easy to use makes a huge difference!
Made this little gem in about three minutes!
Grilled chicken
Hummus
Green peppers
Cucumbers and spinach
Wrapped in a Ezekiel tortilla

Spaghetti

Turkey
Green pepper
Onion
Red and yellow peppers
Organic tomato basil sauce
Organic whole grain pasta

Egg toast

Ezekiel toast with eggs and organic salsa! Yum!

Snacks

Just wanted to share a couple snack ideas that I like.
Hummus and veggies
Laughing cow cheese, back to nature crackers, and veggies.

Garden fun

We have had zero luck pot planting veggies. So this year, hubs built this awesome raised bed on the side of our house. Perfect amount of fun and shade on that side do we hope to get done great crops!
We used PVC pipes and tubes to make a top and then netted it all up to try and keep out critters. The deer and bunnies eat everything.

Requests

So I have been hearing a lot of this lately from some of the lettuce heads...
Can we have normal bread?
Can we have a day of eating corn dogs?
Can we make cookies, but not healthy ones?
Can you buy real kid cereal?

I get it, they are kids, they like crap!
I am pretty good about letting them eat a bit of crap to keep them not craving it. To make them not feel completely weird at the lunch table at school.
Yup, kids at school have been crazy weird about what kids eat for lunch. Lucky my kids are strong and try to educate the other kids. My son said "at least mom lives me enough to make me healthy food"! A little over the top? Maybe. But also way cool!
Keeping a balance is important. So, I sneak in some girl scout cookies. Get them the honey whole wheat bread, let them have yogurt with candy pieces. Get them ice cream and brownies.
Same as with adults, everything in moderation!
Teaching them it's okay to have those treats. Just not everyday.
It's a tough road, that road to good healthy eating habits! Start early!!!
But don't forget we all need treats! I think if we completely deprive ourselves we will go crazy when we get them.
I don't have cheat days, or off days, I just have days! Some are healthier than others. Ford and the kids! It's okay! If you eat 99% clean, that 1% is not that big of a deal.


Breakfast

Bobs red mill even grain cereal cooked and served with raspberries, cinnamon, honey and unsweetened almond milk.
So good! It takes a bit longer to cook than regular oats, but is worth it! This one bag has lasted me forever, so don't be thrown by the price. Theses products are a little bit more money, but so good for you and If you make only what you need, they will last for a while.

Broccoli, rice and chicken

Found a phone app that I just love! It's called the whole foods app. You can put in items that you have to cook with, pick things you want to avoid, and the. It will spit out recipes for you! With pictures!! Very important to me! U like to see what my food is going to look like, or rather what it should like like!
Last might I made this yummy dish and it was loved by everyone!!
Simmer 1/2 cup water in deep skillet
Add one chipped onion and two cloves if garlic
Cook until soft and then add bite size pieces of chicken (I used 1 pack of boneless skinless chicken tenders
Also add 3 cups low sodium veg stock
1 cup brown rice
Simmer covered for about 20-30 min, add in bite size prices of broccoli, fresh thyme and pepper to taste and continue to simmer until broccoli is soft and liquid is gone.
Fluff and serve!

First attempt granola bars

These came our pretty good, modifying a recipe that was posted on Facebook from Fit and Healthy with Debbie Reichert.
I used 2 cups oats
1/2 cup brown sugar
1/2 cup wheat germ
1 tsp cinnamon
1 cup whole wheat flour
1/2 cup slivered almonds
1/2 cup dark chic chips
1/2 cup honey
1 egg beaten
2 tsp vanilla
3/4 Tsp salt

Mixed dry then wet then together, pressed into a 9x13 lightly greased (with olive oil) pan.
Baked in pre heated oven on 350 for 20 minutes.
Kids said they were really good! I would like them to be a bit crunchier, but will work on that!
