Frozen yogurt

Kids and I had big plans today. Get packed up for our next trip, clean house, do some school work and then head to the pool. Thunder ruined those plans, do we opted for making a yummy treat instead and watching a movie.

Frozen yogurt:
1 cup 0% plain Greek yogurt
1 cup frozen mixed berries
(my bag was raspberries, blueberries and blackberries)
1 frozen banana

Popped all in a food processor and it turned into this yummy, yummy treat!
The kids topped with mini dark chocolate chips!

Camping fun and first night food.

So much fun. So much work. So great for Family bonding!
SO GOT RAINED OUT!!

Okay, so we did have 95% chance of rain when it was time to check in, but we worked our butts off making food for that trip! We really wanted to go!

We bagged the trip because of horrible rain, thunder and lightning and decided to do a fun "screen porch camp night"!!
sounds fun, right!!??

We played a couple games, laughed a lot, had some heathy snacks. It was a fun time...then all the kids went in the house to sleep! Ha! Ha!

Dinner we had was fantastic! We made up a grilled chicken salad to be eaten the first night at camp, cause who likes cooking after setting all the stuff up? Not me!!

Grilled chicken
Ancho chili powder
Garlic
Smokey paprika
Black pepper
Cumin
Cooked in a bit of olive oil
Chopped and added to a bowl of chopped veggies. Whatever you want is fine, I used green and red peppers, cucumbers, red onion and cherry tomatoes.
Added some whole grain noodles, and some balsamic vin dressing.
Just a very small amount. Like really little. Just a lite pour across the top.
Mix it all up and refrigerate!

Travel tips to help you stay fit over vacation

*take your cooler, packed full of healthy veggies, fruit, salads, waters and protein shakes! Plan for a long trip by taking the time to bake some things ahead.

*pack a small bag full of healthy snacks and waters.
Even when you think your leaving for just a short trip, things can change and you might be out all day. Be prepared!!

*take your workout binder and shoes!
I usually do HIIT workouts, so it's not a big deal to do a quick workout. I don't miss out on anything and still feel like I'm keeping up on my fitness.
My gymboss timer always makes it into my bag!
Pick quick, effective workouts!

*look around you and use what you have for equipment. Don't make excuses.

*make little packs of things you love!!
I always try to make oatmeal packets, with oats, protein powder, almonds and flax. Perfect portions for one person. Just boil water and add it to the oats!

Mini baked oatmeal bites

Pancakes? No.
Waffles? No.
Cereal? No.
Eggs? No.

Sometimes it's so hard to decide what to make for The kids for breakfast.
This morning, I woke up on a mission, make something new and something they will like.
After seeing a few pictures of oatmeal bakes on pinterest, I came up with this.

Dry:
2 cups rolled oats
1 tbsp Cinnamon
2 tbsp flax meal
2 tbsp mini dark chocolate chips

Wet:
1 whole egg
1-1 1/2 cups unsweetened vanilla almond milk
1 tsp vanilla

(you can adjust as needed, I usually don't measure, but go by how it looks)

Mix dry and wet separately.
Line a muffin tin with silicone cups and pour the dry about 3/4 full in each.
Pour wet over the oats until they are pretty covered but not floating. (this is the kind of go by how it looks)
Top with strawberry slices and banana slices. (I added the banana after I took the picture)
Bake in a preheated 375 oven for about 15 min.
Every oven is different so keep an eye on them, they will puff up nicely and be "like a oatmeal muffin".

Kids comments:
13 yr old said "I like it better than most if your healthy baked stuff"

11 yr old said "really good! Good enough to make at least 3 more times"

8 yr old said nothing, (her mouth was full) but gave a big thumbs up

French toast made healthy!

Ezekiel bread
Egg whites
Unsweetened almond milk
Vanilla
Cinnamon
Mix all together and dip bread into mixture.
Cook on griddle, flipping when golden brown.
When both sides are golden, plate and top with 0% Greek yogurt, chia seeds, blue berries and banana slices.

Fourth of July breakfast!

Found these Kodiak cakes that are 100% whole grain. The kids seen to enjoy them. I always add a scoop of vanilla protein powder to them. (they never notice)
Today we decide to make them a little more festive for the 4th of July!

My breakfast was 0% Greek yogurt and fresh fruit!

Easy summer salad

1/2 cup quinoa
1 cup water
1 cup frozen corn
1 cup frozen edemame
1 tbsp extra Virgin olive oil
Sea salt and pepper

Cook quinoa in water, cook corn and edemame. drain and add to edemame and all the other ingredients. Chill in fridge for 30 minutes before serving.


Workouts

This is my home gym. Where the magic happens! Lol
Not much equipment, because I do a lot of body weight stuff.
I keep a binder that's filled with hand written or printed workouts from BodyRock or Zwows. I will also make my own workouts and keep them.
I write down my reps, my times, and then go back to try and beat my PR!

Have fun with your fitness! Don't make excuses, just find what works for you and makes it happen!!

Tuna lettuce wraps

All white tuna in water
Chopped onion
Chopped tomato
Chopped cucumber and celery
Bit of pepper, cumin and cayenne.
Put into a piece of lettuce and topped with a couple sliced snacking peppers.

Clean eating...

It's what works.
Just eat healthy!

The picture on the right is me. Working out 5 days a week at home, running 2-3 times a week, but eating clean.
